ORGANOLEPTIC FEATURES

Colour: intense ruby red
Bouquet: Intense with a floral and spicy note remembering honey and vanilla.
Taste: well-balanced sweetness, harmonic and velvety.
Conservation: To be consumed preferably young or after a little refining.
Serving Temperature: 12° C
Serving Suggestions: rare wine served with seasoned cheeses (Castelmagno), with desserts and with Chocolate.

TECHNICAL CHARACTERISTICS:

Varietal: 100% Ruche' di Castagnole Monferrato
Alcoholic strength: 14%
Grape provenance: Castagnole Monferrato.
Terrain: silty-clay soil with a high percentage of limestone sud-ouest
Production per hectare: 70 quintals.
Vinification process: dry grapes on mats, than traditional red vinification in dicember.
Fermentation temperature: 26° C.
Duration of maceration: 6 giorni.
Ageing process: matured in little used oak barrels for 12 months, than ageing in bottles.
