ORGANOLEPTIC FEATURES


Colour: light ruby red.
Bouquet: delicate, lingering, fruity, with flowery hints, and a peppery and spicy sensation.
Taste: soft, dry with a pleasant almondy and bitter aftertaste, which is "unique".
Conservation: when consumed young it has an excitable character, with short ageing it become more velvety.
Serving temperature: 15-18° c. In summer, to be served cool.
Serving Suggestions:
veal in tuna sauce, raw meat, "Finanziera", salamis and "agnolotti", Piedmontese mixed fry and rich fish dishes fried or grilled with aromatic herbs.
